    With April being National Pecan Month, there is quite a bit to celebrate at Pearson Farm.

    In February, the Flavor of Georgia contest recognized Pearson Farm’s cinnamon roasted pecans in the Snack Foods category in February, judging the product on flavor, texture, and ingredient profile.

    Then in March, the Georgia Pecan Growers Association chose Lawton Pearson of Pearson Farm as the 2016 Georgia Pecan Grower of the Year. The nominations were based on the individuals’ contribution to making a difference in the industry and their years of service.

    Lawton places all the honor in the work of those on the farm and to the heritage started by his family stating, “There is no bigger honor than being recognized for something you love doing,” Pearson said. “Pecans have been a large part of my family for generations and to be recognized in both ways is humbling. I am so very proud to accept this award on behalf of my family and everyone who works with us at Pearson Farm”.

    Lawton is a partner and 5th generation owner of one of the oldest continually family owned peach and pecan farm in Georgia, Pearson Farm.  Lawton feels pride every time he walks on the land knowing he is harvesting on the same land as generations that preceded him.

    While Lawton appreciates the recognition of his community and peers, being part of the Pearson Farm legacy is ultimately the most rewarding.

  • Mary’s Pecan Oatmeal Cookies

    To tantalize your taste buds we thought we would invite you into our kitchen as we make delicious Oatmeal Cookies made with our very own Georgia Pecans. Enjoy!

    Ingredients:

    (2) cups - oatmeal (2 ½) cups - flour (2) sticks - butter (1) cup - brown sugar (1) large egg (2) teaspoon vanilla (1) cup toffee (1) cup pecans

    Directions:

    In a large mixing bowl, mix brown sugar and butter until fluffy or creamy. Add the egg and vanilla and mix. Add oatmeal, toffee, pecans and flour. Mix by hand into cookie dough. Portion dough on to greased cookie sheets with a melon scoop. Bake in a preheated oven at 350 degrees F for 20 minutes.

  • You Are What You Eat

    If you are like the majority of Americans, by now you have already forgotten, broken or abandoned your new year’s resolution. Quite frankly, it’s not surprising. It wasn’t that long ago that it was a time of sharing meals with friends and family, the days were full of cheer. We were tempted with punch, cookies and delicious pies. It is hard for anyone to snap out of that mindset so quickly.  So as we sit here in early 2016 and reflect back, are we what we eat? And if so, what is that?

    May I suggest pecans? And no that won’t make you nuts.  Pecans are well-documented to be a good way to lower your cholesterol, assist in weight loss, help you with hair growth and aid in building your immune system.  Pecans are a good source of vitamins, minerals and protein.  It was discovered that native Americans could get as much protein from eating pecans as they could from wild game.

    Pecans are many things and yes, they are a delicious and healthy snack.  Eating healthy can help you look good for your sweetheart on Valentine’s Day which is just around the corner.

    Here is a recipe to help you change who you are if you are about to change what you eat.

    Healthy Granola Bars with Cranberries and Pecans

    Photo and recipe courtesy of: Nicole These granola bars are naturally sweetened with bananas, applesauce and cranberries. There is no processed sugar or artificial sweeteners. (However, we recommend adding a touch of maple syrup or honey for your sweet tooth.)

    Nuts, seeds and whole grains support digestive and heart health. Pecans are rich in antioxidants, so these real food granola bars are truly nutritious!

    Ingredients:

    3 1/2 cups old-fashioned rolled oats 3/4 cup Pearson Pecan Pieces 3 large, ripe bananas 2/3 cup unsweetened applesauce 3/4 cup dried cranberries 3/4 tsp ground cinnamon 1/2 tsp ground nutmeg 2 tbsp ground flax seed (or flax meal) 1/2 tsp salt

    Directions:

    Preheat your oven to 350 degrees F.

    In a 9x13 baking sheet, lay a silicone baking mat or layer of parchment paper.

    Mix oats and pecans. Toast oats and pecans in a large skillet or in the oven on a baking sheet. They should be lightly toasted after a few minutes. Set aside.

    Place bananas in a large mixing bowl. Mash the bananas with a fork until mushy. Add applesauce and mix together.

    Once the oats and pecans are toasted, pour into a large mixing bowl. Mix in cranberries, flax seed, cinnamon, nutmeg and salt.

    Add banana and applesauce mixture. Stir until clumpy and transfer to baking sheet.

    Make sure that the mixture is even (see picture). Bake for 30 minutes and then cool. Cut into bars. (It should make about 15 granola bars.)

    Store in the fridge or freezer for a healthy snack!

  • Five Things to Do with Pecans (None are Pecan Pie)

    If there is one thing that is synonyms with the holiday season it is pecans. Whether whole, toasted and spiced, stuffed in a pie or covered with chocolate, pecans always make an appearance this time of year.

    The good news is that with little saturated and no trans-fat, pecans themselves are considered to be heart healthy.  They are also a good source of protein, potassium, thiamine, and are ranked among the top 20 foods for antioxidant capacity.  While pecans have many health benefits and uses, many people get stuck in doing the same ol’, same ol’.  This year, why not get creative with our pecans and discover new ways to bring the traditional holiday nut into your festivities. A quick search on Pinterest will quickly help get your creative juices flowing. Here are a few ideas to get you started:

    1. Cookie Bouquet - Instead of bringing a pie as your contribution to the holiday meal, Try a pecan cookie bouquet. Insert long lollipop sticks or a wooden skewer before baking.  If the stick comes through a bit on the other side, patch it up with a little extra dough.  When the cookies are done baking, display in a basket using a piece of green florist foam at the bottom to insert the sticks, fill the base of the basket with tinsel or decorative paper filler and voila!
    1. Use the Shells - Did you know that pecan shells are an economically friendly way to season on the grill? Add pecan shells to your briquette and allow them to burn. Place your food on the grill to cook over the pecan smoke. This acts as a natural seasoning as it adds the flavor and smell of pecans to meats.
    1. Homemade Granola- Homemade gifts made with love are the best gifts. Make some granola with blueberries and pecans, store in a decorative jar and give as gifts to unexpected holiday guests.
    1. Maple Crumbles - Try spreading holiday cheer with the latest and wildly popular pecan product, Maple Crumbles. These provide a different and exceptional flavor when added to oatmeal, salad or ice cream.
    1. Upgrade your stuffing- kick that stuffing recipe up a notch by adding pecans and cranberries or pecans and apples, experiment with different pecan-fruit combinations for a flavor that will surprise your guests.

    Over the course of time things needs to change, even if things remain the same. Let me explain.

    Here on Pearson Farm, to ensure that we have consistent quality of our products, we have to plant new trees from time to time. We also need to manage the soil and constantly be aware of weather conditions and other potential hazards to our crops. This attention to detail allows us to proudly deliver the quality products, year after year after year. You might say that quality is our legacy.

    So what has changed?

  • Holiday Time Is Nuts

    I was in the store this past weekend and when looking at the shelf, I did a cartoon double take. I closed then rubbed my eyes, and when they opened again I was still seeing the same thing – Christmas decorations!

    Call me old school but isn’t September just a little bit too early to start thinking about the holidays? After some additional consideration I thought that this was a great time to start planning. While I still believe that it IS too early to be worrying about Christmas, I realized that Halloween is just about 45 days away. Thanksgiving is a month after that and that is the start of the full-fledged holiday party season. The time to start planning is now.

    So to get your creative culinary juices flowing, I thought I would give you a couple of quick seasonal suggestions. Here is a quick and easy recipe for Pecan Balls:

    Ingredients:

    • 1 cup butter
    • 4 tablespoons sugar
    • 2 teaspoons vanilla
    • 2 cups flour
    • 2 cups chopped Georgia pecans from Pearson Farm
    • Powdered sugar

    Directions:

    Cream butter and sugar. Add vanilla, then flour and pecans. Mix well. Roll into small balls. Bake 30 - 40 minutes on cookie sheet at 300 degrees. Roll in powdered sugar.

  • Reason’s For The (Peach) Season

    As we wind up this year’s peach season, I thought it might be fun to share a few interesting and lesser known facts about peaches.

    • Peaches are originally from China and are a member of the rose family. When they are in bloom, you can see the beauty. Pearson Farm Peach Trees in Bloom
    • Columbus brought several peach trees to America on his second and third voyages.
    • Did you know that eating a peach can be great for weight loss? Peaches typically contain under 50 calories, 0 grams of fat and 3 grams of fiber. They are an ideal snack because they make you feel full and therefore you eat less.
    • It may surprise you to learn that 1 medium size peach contains 9.3% of protein.
    • Peaches are also healthy because they are a good source of vitamins A, B and C, magnesium, phosphorus, calcium and potassium.
    • Because peaches contain vitamins A and C they are a natural cure for refreshing the skin and a great moisturizer. Perhaps this is why peaches are often used in cosmetics.
    • Hungarians refer to peaches as the ‘fruit of calmness’ because peaches help to reduce anxiety. They are also good for the digestive system, the well-being of muscles, the heart and bones.
    • Although you can’t prove this one on me, peaches can even have a positive effect on our scalp because they help to reduce hair loss.
    • But perhaps the most interesting fact about peaches is “The world’s largest peach cobbler" is made every year right here in Georgia and measures 11 feet by 5 feet.
