Peach Fluff
Ingredients:
- 2 (3-ounce) packages peach flavored gelatin
- 1 (8-ounce) can crushed pineapple, drained (reserve juice)
- 3-4 cups finely chopped fresh Georgia peaches from Pearson Farm
- 2 cups buttermilk
- 1 (8-ounce) container whipped topping, thawed
- 1/2 cup chopped pecans, if desired
- Vegetable cooking spray
- 2 envelopes Sweet & Low or sugar to taste for peaches
Directions:
Combine gelatin and pineapple in medium saucepan over low heat. Dip peaches in pineapple juice; then add juice to saucepan, stirring until gelatin dissolves. Remove from heat and cool; stir in buttermilk. Place in refrigerator until consistency of thick syrup; fold in thawed whipped topping, peaches and nuts, if desired. Pour mixture into an 8-cup ring mold or Pyrex dish lightly coated with vegetable cooking spray. Garnish with peaches and mint leaves, if desired.
