2 (3-ounce) packages peach flavored gelatin
1 (8-ounce) can crushed pineapple, drained (reserve juice)
3-4 cups finely chopped fresh peaches
2 cups buttermilk
1 (8-ounce) container whipped topping, thawed
1/2 cup chopped pecans, if desired
Vegetable cooking spray
2 envelopes Sweet & Low or sugar to taste for peaches
Combine gelatin and pineapple in medium saucepan over low heat. Dip peaches in pineapple juice; then add juice to saucepan, stirring until gelatin dissolves. Remove from heat and cool; stir in buttermilk. Place in refrigerator until consistency of thick syrup; fold in thawed whipped topping, peaches and nuts, if desired. Pour mixture into an 8-cup ring mold or pyrex dish lightly coated with vegetable cooking spray. Garnish with peaches and mint leaves, if desired.
