Pecan Pie Muffin

In our house a good muffin can be served with any meal. These light and flavor rich muffins can be a compliment to any holiday meal or gathering. Be sure to let me know how you like them.


  • 1 cup Pearson Farm Chopped Pecans
  • 1 cup firmly packed brown sugar
  • 1/2 cup melted butter
  • 2 large eggs
  • 1/2 cup plain flour (We prefer King Arthur flour)


Preheat oven to 350. Combine the first three ingredients in a large mixing bowl. Make a well in the center of the mixture. Beat eggs until foamy and combine with butter & sugar. Add to dry ingredients stirring just until moistened. Spoon batter into greased muffin tins. Bake for 20-25 minutes or until done.
