Pecan Shortbread

Peach ShortbreadIngredients:

  • 1 cup plain flour
  • 1/2 cup pecans
  • salt
  • 1 stick real butter
  • 1/4 cup firmly packed dark brown sugar
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon ground cinnamon

 

Directions:

Preheat oven to 300 degrees. Process first three ingredients in a food processor until finely chopped. Beat butter and sugar by hand or at medium speed with an electric mixer until creamy; add almond extract and cinnamon, beating well. Beat in flour mixture. Shape dough into a ball, and chill overnight. Roll dough out on a lightly floured surface to 1/4 inch thickness. Cut using a cookie cutter. Bake on baking sheets at 300 degrees for 25 minutes. Serves 24. Vanilla extract can be substituted for almond extract.
